Date and blackberry cake with coconut whipped cream

This cake is mindblowing and overall rich in healthy ingredients! Moreover, it doesn’t contain either milk or eggs because it is, surprise!, also vegan. You can serve it at the end of a light dinner or at breakfast, as a wonderful and energetical meal. 

Serves 8

  • 200 gr dates
  • 140 gr whole flour
  • 140 gr white flour
  • 70 ml extravirgin olive oil, or coconut oil
  • 80 gr brown sugar (I used the Muscobado, slightly aromatic) + 2 tbsp more
  • 250 ml blackberry juyce (or whatever berry you like)
  • 1/2 glass oat milk (or soya, rice or almond milk)
  • 1 tbsp apple vinegar
  • 1,5 tsp baking soda
  • 2 oranges (organic, if possible: you will need also the skin)
  • 1 coconut milk can
  • 1 tsp coconut oil
  • 2 tbsp powder sugar
  • 250 gr fresh blackberries (or whatever berries you like)

Put the pitted dates in a food processor with the sugar (apart from the 2 tbsp you will use later), orange zest, juyce, oil and milk and whizz until creamy.
